Modified food Definition: Genetically
modified foods, GM foods or genetically engineered foods, are foods produced
from organisms that have had changes introduced into their DNA using the
methods of genetic engineering as opposed to traditional cross breeding.
Allergen: An allergen is a type of
antigen that produces an abnormally vigorous immune response in which the
immune system fights off a perceived threat that would otherwise be harmless to
the body. Such reactions are called allergies.
Rancidity definition: Rancidity is a
very general term and in its most general meaning, it refers to the spoilage of
a food in such a way that it becomes undesirable (and usually unsafe) for
consumption.
Antioxidant: An antioxidant is a molecule that inhibits the
oxidation of other molecules. Oxidation is a chemical reaction that can produce
free radicals, leading to chain reactions that may damage cells. Antioxidants
such as thiols or ascorbic acid (vitamin C) terminate these chain reactions.
The term "antioxidant" is mainly used for two different groups of
substances: industrial chemicals which are added to products to prevent
oxidation, and natural chemicals found in foods and body tissue which are said
to have beneficial health effects.
Fat: Fat is one of the three main
macronutrients, along with carbohydrate and protein.[1] Fats, also known as
triglycerides, are esters of three fatty acid chains and the alcohol glycerol.
The terms "oil",
"fat", and "lipid" are often confused. "Oil"
normally refers to a fat with short or unsaturated fatty acid chains that is
liquid at room temperature, while "fat" may specifically refer to
fats that are solids at room temperature. "Lipid" is the general
term, as a lipid is not necessarily a triglyceride. Fats, like other lipids,
are generally hydrophobic, and are soluble in organic solvents and insoluble in
water.
Biocatalyst: Biocatalysis can be
defined as the use of natural substances to speed up (or catalyze) chemical
reactions. The natural substances of which I speak can be one or more enzymes
or cells. An enzyme is simply a protein catalyst, and enzymes have many
important uses.
